I hope you all had a wonderful holiday weekend! Ours was filled with birthday celebrations, cleaning, crafting, and lots of cooking. My family came into town Easter Sunday for the first holiday hosted at Heardmont, and wouldn’t you know it? Nobody took a single photo! I was kicking myself for forgetting to snap pictures of the special occasion.
I did take a couple iPhone photos today of the beautiful roses my grandparents brought from their garden. It’s amazing to me that the roses were in bloom at all since we’ve had rain, rain, and more rain for 4 DAYS STRAIGHT and counting…

You think I’m exaggerating, but after a rainy week last week, the thunderstorms started Friday and it hasn’t stopped POURING for more than an hour since. We have a friend who has started calling her yard The Lazy River. I’m just praying it stops raining soon and our roof doesn’t spring a leak!
We made the best of Easter despite the rain. We cooked lots of delicious food (and by “we” I actually mean my awesome husband Stephen). Here’s what was on our menu:

Rhubarb Pie (Grandma’s famous dessert!)
I’ve got to say, Stephen sure knows how to cook. The pork loin was awesome and all the sides had us stuffed until bedtime. Probably my favorite dish of all (besides grandma’s pie) was the corn casserole. It’s a really simple recipe we got from my mother-in-law and it’s always a hit.

Corn Casserole
2 cans corn with juice
1 stick melted butter
1 package Jiffy cornbread mix
1 beaten egg
8 oz sour cream
Mix all the ingredients together and bake at 400 for 30-45 minutes, until puffed and slightly brown on top. Serve and enjoy.
I’m tellin’ ya. The next time you have a potluck or special occasion, you’ve got to try this casserole. Your friends will thank me!
