Today I want to share the easiest fall recipe I’ve ever made. I make these Pumpkin Spice Cupcakes every year around this time, and they’re always a hit. The best part is they taste like you made them from scratch but they take only 4 ingredients!
1 yellow cake mix
1 (15 oz) can pumpkin pie filling
1 tsp cinnamon
1 tsp nutmeg
cream cheese frosting
Mix together the cake mix, pumpkin pie filling, cinnamon and nutmeg and fill paper baking cups with the mixture. Bake according to the cake mix instructions. After the cupcakes have cooled, frost with cream cheese frosting and add a piece of candy corn for decoration. It’s that easy!
I took a batch of these to a party last night and all the girls loved them. If you want to try a slightly healthier version, forget the frosting and the candy corn and call them Pumpkin Spice Muffins instead!
