Glazed Chocolate Cake

I have to start off this post today by saying my husband is just the absolute BEST!  I had such a craving for chocolate cake last night, so instead of just whipping up a cake mix, dumping it into a cake pan and calling it done, what did he do?  He baked this 2-layer chocolate creation, put it on a cake stand and drizzled it with a delicious, melt-in-your-mouth glazed frosting.

This was literally one of the best chocolate cakes I’ve ever had.  It smelled so amazing that we poured big glasses of milk and tried a piece before it had even cooled off!

Glazed Chocolate Cake

Stephen used a cake mix and actually found this frosting recipe online at Cooks.com because he needed something that didn’t require white sugar (we’re out).  I commented that the frosting he made was very similar to the glaze on a donut and thought you all might like to try out this recipe for yourselves.  Here’s how he did it.

BROWN SUGAR FROSTING
1 1/2 c. firmly packed light brown sugar
1/4 c. milk
3 tbsp. butter
1 tsp. vanilla

Place first 3 ingredients in heavy saucepan. Mix until sugar is moistened. Bring to full boil, stirring occasionally. Boil exactly 3 minutes. Remove from heat and add vanilla. Place pan in cool water in sink and beat contents until cool. This frosting thickens quickly once cool. If it gets too thick, add a small amount of milk and beat until spreadable. Frosts 9 inch cake.

I’m guessing there was a little more milk in Stephen’s glaze than the recipe called for, since the frosting never got to the point that it was “spreadable.”  Instead of using a spoon or knife to spread the frosting, he poured a bit on the first layer of cake, added the second, and poured the rest over the top until it ran down the sides all around.  A recipe for success, if you ask me!
